About
A slender fish of about 15 cm, pale blue above and silvery white below, with the small adipose fin behind the dorsal that marks its salmon relatives. Most live only a single year. Stocked into lakes across Japan from the Taisho era onward, it is the target of ice-hole fishing, a beloved winter pastime, and is usually eaten as tempura or in a sweet-vinegar marinade.
